Steak Frites

Wine Pairing Recs: Benziger Tribute or Imagery Pallas

Ingredients

  • (2) 10 oz. flat iron steaks
  • 2 oz. apple cider vinegar
  • 3 sprigs of thyme
  • 1 oz. butter
  • 1 sweet onion
  • 2 oz. honey
  • 1 clove garlic
  • 2 Russet potatoes
  • 2 oz. canola oil
  • 1 jar Truffle Carpaccio (optional)
  • Balinese Truffle Salt (to taste)

Prep the Steak and Bake the Frites

***When you're ready to start preparing the meal, take out the steak, remove from the packaging, and allow it to sit at room temperature on a plate with paper towels to temper.***

1. Preheat the oven to 375F.

2. Wash and cut the potato into quarters lengthwise. Then cut each quarter into 3 steak fries.

3. Place the steak fries in the mixing bowl, add half of the canola oil and toss the fries in the bowl with a little Balinese Truffle Salt.

4. Spray the lined sheet trays with pan spray. Line the steak fries up on the trays; leave space between fries.

5. Place the fries into the oven and cook for about 45 minutes, rotating the pan every 15 minutes.

6. Peel and small dice the sweet onion, measure out 1 cup for this recipe. Reserve excess onion for another recipe.

7. Chop the Truffle Carpaccio (if using).

Cook the Steak

1. Season the steaks with Balinese Truffle Salt.

2. Heat the large sauté pan over high heat. Add the rest of the canola oil to the pan.

3. Right before the oil begins to smoke, add the steaks to the pan.

4. While cooking over high heat, flip the steaks every 30 seconds. Continue flipping the steak every 30 seconds for about 2-3 minutes for a solid medium rare.

5. Right before the steaks are finished, add the butter to the pan. Smash the garlic clove and add it to the pan along with the thyme. With your spoon, baste the steaks in the pan.

6. Remove the steaks from the pan and rest them on your cutting board. Top with garlic and thyme.

7. Heat the pan over medium-high heat and add the diced onions to the pan, season with Truffle Salt.

8. Cook the onions until caramelized, about 4-5 minutes.

9. Add the apple cider vinegar and honey to the pan and reduce until thick like jam.

10. Remove the steak fries from the oven and toss in the mixing bowl along with the chopped Truffle Carpaccio (if using) and a sprinkle of Balinese Truffle Salt.

11. Plate the steaks, topped with some caramelized onion jam, and a pile of truffle fries alongside. Dig in!
